Steak Sandwiches with Horseradish Mayo

Steak Sandwiches with Horseradish Mayonnaise

Ingredients:
1-lb piece steak
4 tablespoons butter
3 medium onions, thinly sliced
1 ½ tablespoons minced shallots
8 ounces large shiitake mushrooms, stemmed, caps thinly sliced
Salt
Freshly cracked black pepper, to taste
For the Horseradish Mayo
½ cup mayonnaise
¼ cup prepared white horseradish
Salt
Freshly cracked black pepper, to taste

To Make the Horseradish Mayo:
In a small bowl, combine the mayonnaise and horseradish.  Season with salt and pepper.

To Cook the Steak:
Pat the steak dry and season both sides well with salt and pepper.  Melt 1 tablespoon of butter in heavy large skillet over medium-high heat.  Add the steak to the skillet and cook about 5 minutes on each side.  Transfer the meat to a cutting board and let it stand for 5 minutes.

To Cook the Mushrooms:
In the same skillet, melt 3 tablespoons of butter over medium-high heat.  Add the onions and shallots, sauté until golden brown.  Add the mushrooms and sauté until tender, about 5 minutes.  Season the onions and mushrooms with salt and pepper.

Finally, to Assemble the Sandwiches:
Slice the sandwich rolls in half.  Generously spread each side of the roll with the mayonnaise mixture.  Thinly slice the flank steak against the grain and divide among the rolls.  Top with the onion and mushroom mixture.  Cover the sandwiches with the top half of the rolls.  Makes approx 4 sandwiches.
